Hi guys,
Always loving store bought butter cookies but find it too dry or buttery or milky or sweet? Or anything you don't like about it? I love butter cookies but I find that the store bought butter cookies tend to be quite dry, there's not much "moisture" in the cookies. So I decided to bake my own butter cookies and it's really easy! Besides that, it only require 4 ingredients. How easy is that!?
These cookies finished in just a day! No exaggeration at all and I'm being serious.
Ingredients needed : (I'll state the measurements in grams and cups so that it's easier for you guys to follow the measurements without converting.) DO NOT CHANGE THE INGREDIENTS AMOUNT! I have always make my cookies less sweet but flavorful. You can definitely adjust the butter amount to your taste buds.
Amount I made:
79 Gingerbread Man + 1 Circle cookies.
How I got the circle is because there was too little dough to roll and cut. So I just form it with my hand and flatten it.
Cake Flour:
200g
1⅔ cup.
Icing Sugar:
50g
½ cup.
Butter:
150g
⅔ cup.
Milk:
2 Tablespoons
1. Soften the butter using a spatula before mixing in the icing sugar. I like to soften the butter first because it gets to room temperature and when it's soft, it's easier to mix.
2. Sift in the icing sugar. Fold in and mix it until it's creamy.
This is the desired texture.
The batter will drop down smoothly.
3. Sift in 1/3 of cake flour. After sifting, add in 1/3 of milk. Fold in and mix till you can't see bits of flour. (DO NOT OVERMIX!)
This is the texture you will get. Don't worry about the lumps of flour, it will "dissolve".
Sift in another 1/3 of flour and another 1/3 of milk. (DO NOT OVERMIX!)
This is the kind of texture you want to get during the 2nd mixing.
Finally, sift in the remaining flour and milk. (DO NOT OVERMIX!)
You will definitely get a dough texture after all the mixing. I just roll it into a ball.
4. I split the dough into half so that it's easier and the freezing time will be quicker. I roll it between 2 parchment papers. You can do it on your countertop or whichever you like. I just find that rolling it between parchment papers is easier to clean up.
I flatten it using my hand to make it easier to roll out.
And you can start rolling out!
This is the thickness I'm going for. It depends on you whether you want your cookies to be thick or thin.
Freeze it for 30 mins.
5. Cut out your cookies! Use any cookies cutter you have. You can even just use a knife to cut squares out of it. Whichever way you like!
These are the cookies cutter I have but I'm using the gingerbread man cutter (the bottom right).
Start cutting out and have fun! Haha
Last one to go!
Don't waste the remaining dough! Just form it back and roll out again.
6. Bake your cookies at 180˚C/360˚F for 15 mins.
I'm using a silicon mat but you can also use parchment paper. Use what you have.
AND VOILA! You're done and ready to enjoy!
