Fruit Jelly | Longan & Lychee Jelly

Hi guys,

Father's day is around the corner and you have no idea what to make for your father? I'm going to share something REALLY EASY to make and of course, it taste delicious! It's not entirely a recipe but I'm still going to share this because it's really easy and I intend to make it for my father :)

I just love how the chia seeds make it looks so pretty!

1L Water : 
The jelly mix actually calls for 1,250ml of water but I like it more "dense" ? Anyway, the end product wasn't hard as well.

Can Of Longan :
I wanted to use fresh longan but I couldn't find any so I used can instead. Works well :)

Fresh & Peeled Lychees :
I managed to find some fresh lychees. So I just peeled, remove the seed and break into smaller pieces.

(Use any fruits of your choice! I just like this two fruits of combination.)

Chia Seeds :
TOTALLY OPTIONAL! I just like to have the crunch of it but actually can't really taste it also LOL

Jelly Mix :
Any jelly mix of your choice. You can use homemade jelly recipe of your own :)

I used a cupcake pan for this because I don't have any moulds for jelly. I ended up using a muffin pan as well. Use any moulds/pan you have. You can also just pour it into a container and wait for it to cool then cut out shapes of jelly.

Start off by boiling your water.

While waiting for my water to boil, I added some water into my chia seeds to let it soften.

And when it comes to a boil,

Gradually add in your jelly mix. You don't want to pour everything because you want it to be well dissolved.

And when you're done adding your jelly mix, let it boil for a little while more. Just to make sure that it's well dissolved.

In the meanwhile, I laid out my lychees and longans in my trays.

(On a side note: I also added some of the longan syrup from the can for some sweetness instead of plain & bland jelly. You can decide whether to add or not.) I also stirred in my chia seeds.

And you can start pouring in! You have to work QUICKLY because it sets pretty fast.

And you're done!!

Oh, you also want to poke the bubbles because you don't want your jelly to have "air pockets".

Let it cool in the fridge for AT LEAST 15 minutes and you're ready to eat it!! Enjoy!! :)

This idea actually came from my mum and I was thinking that it's a great idea! So I decided to share it with you guys. I really enjoyed it because it's so refreshing and delicious! I mean, it's so simple! You can't go wrong with jelly mix and fruits. It also looks like you put in a lot of effort for this ;)
